Dried ancho chile peppers are the most commonly used dried chile peppers in Mexico. The pepper has a special place in our heart for its mild, sweet heat with rich smoky flavors and raisin undertones. Dried ancho chile peppers are staples in many favorite Mexican dishes including red chile, moles, enchiladas, salsa, and tamales to name a few.
Ancho chile peppers come from the Puebla Region and Central Valley of Mexico. The pepper starts as a poblano pepper which is then dried until it becomes a dark brown to black color. Many people describe its wide and flat shape as looking like a heart.
