I combined this 00 with semolina flour to make dough for a calzone. the two together created a wonderfully cracker-like crust (not everyone’s idea of a calzone, I know) with good flavor. leftover calzone the next day had staled to more of a traditional calzone crust. again, excellent flavor and texture.
