In making this powder, premium cocoa beans are washed with alkali to neutralize acidity, creating a deep, rich and well-rounded cocoa flavor. In a stunning deep red hue, this specialty cocoa powder makes baked goods like red velvet cupcakes tender, moist and naturally vibrant.
